I've been going a little overboard on the concept of eating the rainbow at every meal lately. But it makes for some pretty and tasty dinners!
Coconut dahl, "cheater" biryani (short grain rice with frozen veg and some coconut milk yogurt tossed in toward the end), steamed purple cauliflower, and a quick lime-y salad with purple cabbage, a home grown bell pepper, and lemon cucumber!
Tacos de papas y calabacitas with home grown tomatoes and romaine in lettuce cups topped with tahini-lime "crema!"
Massaged purple kale with carrots and beets and a lemon/garlic/tahini dressing, topped with avocado, a home-grown heirloom and shiitake bacon!
