Seared King Oyster Mushroom "Scallops" with Truffle-Red Pepper Caviar and fennel puree


These are my new favorite mushrooms, King Oyster Mushrooms. You can cook them just like scallops. I topped them with Truffle-Red Pepper Caviar. So good! I'm making these for my 5 course thanksgiving menu at the restaurant. They are so delicious!

Seitan "Turkey" Roast

I finally perfected my seitan "turkey" roast recipe. This roast is bursting with flavor. It's also wrapped in a crispy yuba skin. I'm going to post my recipe on my blog for everyone in a couple weeks.

I am pretty certain that I would punch somebody in exchange for those scallops. So beautiful!

And that roast looks amazing too, just... those scallops are show-stoppers.
