I made this just now. It's the Portobello Feijoada from Viva Vegan, with Vegan Soul Kitchen Citrus Raisin collards, simple roasted butternut squash and rice. This was so good, I'm still reeling with pleasure. The stuff in the background is coleslaw. Ropa vieja seitan and cilantro-lime rice by Food.Monkey, on Flickr aaand *drumroll* not a very interesting dish, but very Vcon, so relevant nonetheless: Chickpea cutlet, Mexican Millet and VSK simple seared green beans. Seriously, this is my new favorite cookbook. Get it! It's only like 12 bucks on Amazon right now. (Not to sound too much like an infomercial.) And if you're like me and mostly subsist on rice and beans anyway, it's like a year or so of new variations on that theme. I can't think of any dishes in that book that are particularly pricey. Most ingredients aren't even hard to find. Ok, I do live in a very hispanic neighborhood, but still, so much of it is just supermarket staples (or offers substitutions that are easy to find).

The butternut squash salad:
I grated the squash (coarse side of a box grater) then tossed it with lemon juice, olive oil, a dash of red wine vinegar and a dash of cayenne. And salt of course. I think this particular one may have had sunflower seeds in it as well.

thanks for hte update on the butternut salad- i'm interested in trying it, i do a carrot salad that is almost exactly the same, but i have never thought of trying it with butternut or another sweet squash- i think a kabocha might work, too.
