a little coconutty aftertaste, but it wasn't unpleasant. texture was good, melt and browning were perfect.

alan, what's your pizza dough making method? i mean, do you have a pizza stone? what temperature do you heat your oven to? do you rotate the pizza half way through? does your dough rise twice or just once? i'm sorry if you've already revealed your secrets to awesome pizza making before, but i just have to know 'cause they always look so damn amazing and wicked delicious.

Yes.

what temperature do you heat your oven to?

As hot as it will go, 550-ish.

Nope.

Twice. And I usually make it 3-4 days in advance and let it ferment in the fridge.

thanks so much, Alan. we don't have a pizza stone yet and usually set our oven on 500. totally gonna aim for 550ish, or as hot as it can get. we do let the dough rise twice, but i usually just make it the day of. definitely gonna try making the dough a few days ahead of time & let it ferment in the fridge.

i really appreciate it. your dough (/pizzas) are what i aim for ours to look like and this helps me out a bunch. thanks again!

It's really just trial and error/getting a feel for proper consistency. This has been a hobby for a couple years now; my early attempts were TERRIBLE.

I have an incredibly shitty oven, but I let the stone preheat and then sit for about an hour in advance if I can. Helps it reach optimal temp and retain heat when checking on things, switching to the next pie, etc.

Also, you can still get delicious results using your dough the same day, but that bit of tang from the fermentation process just pushes it over the edge into awesomeness. I didn't think it would matter until I tried it. 3-5 days is the sweet spot for me.
