I decided to make something to celebrate National Peanut Butter & Jelly Day! Really I’ll just make any excuse to celebrate peanut butter in all its glorious forms. So I made some peanut butter french toast and stuffed it with jam, cream cheeze and caramelized bananas, so bloody good!

I haven't had stuffed french toast since pre-vegan days and this looks incredible, especially the berries to add sweetness and cut through the rich cream center.
