ooh i am very excited about this and i am also very interested in the mashed potato/green bean idea. thanksgiving to me = stuffing, green bean casserole, and mashed potatoes, all covered in mushroom gravy - so there's no reason this shouldn't be in one pan! :) good work!

I am seriously considering making this for Thanksgiving - the mashed potato/green bean version. I am thinking of leaving out the noodles though... not sure if I can find gf lasagna noodles at this late a date. Do you guys think that would work? It's just the 2 of us for dinner and making one dish instead of 3 seems like a helpful simplification. With gravy over the potatoes and gravy over the green bean bit I think?

yeah, fantastic idea. Calcy, Isa, Kelly and I were talking about this and we came up with some variations, the only one I remembered was green been casserole- so green beans with mushrooms, and fried onion crumble atop the stuffing.

We had a redo of this tonight! it was so good! better than i expected, actually. the noodles were just awesome in it. I only have one camera phone picture. calcy might have a better pic.

I'm kinda wishing I'd had something like this for Thanksgiving instead of all the stuff I made. It was all good, but all the effort wasn't worth the payoff.
