Had to try it. One more reason to love the wacky The Vegg product.

Closest I've been to an omelet in over two years!

Wow. The Vegg is so interesting to me! Does it actually taste like egg?

And your omelet looks so pretty!

Not really! There is some recall to the taste buds but mostly it just looks like an egg. And tastes great. But doesn't taste so much like and egg :)

I bought some sodium alginate the other day when I read that the only ingredients in this stuff are nooch, black salt and sodium alginate. I'm not exactly sure what I'm going to try to do with it yet...

I wondered the same thing -if I could make it home. The directions are to blend 1 teaspoon with 1/4 cup water for a 2-3 yolk equivalent. So I guess play around with the dry ingredients? I'd say the nooch is the primary ingredient. Not sure if it's flakes or powder for the nooch - seems like flakes.

If you figure out something veggy, please share! $7 a package is a lot to keep paying.

That looks GREAT! So does the sodium alginate cause it to actually set like an egg when you put it in the pan? I know nothing about sodium alginate other than it's a thickening agent & I think it's used in molecular gastronomy to make spheres. Does it have the same eggy texture? You know, a little rubbery?

As far as flavour goes, I'm happy enough with a noochy hollandaise yolky type sauce on my tofu - even without black salt - but I'd really love something that would set like an egg.

Very omelety looking, and the fact that it doesn't taste just like egg is selling me even more on wanting to try it.

I have to admit, I really want to try this product... That looks delicious!

Also, every time I make the tofu omelet from Vegan Brunch, I fail miserably, so this is extra intriguing.

I just ordered some Vegg from Vegan Essentials as part of my Chopped winnings! Curious to try it out. It's weird because alginate is what we use for dental impressions. So a little creepy. But I'm excited about it anyway.
