Some pics from my entry for the Chopped:Vegan competition! I went off in a random "Tacos for Dessert" theme, just for fun. I made Coconut-Rice Lace Cookies and filled them with mango custard with a drizzle of Beet-Hibiscus Coulis. I also used the Beet-Hibiscus Coulis to make a gorgeous Mojito. Ha! Check out the blog post for a pic of the cookie-shaping process. It involves the very sophisticated technique of a broom handle suspended across a pair of chairs. :)

That looks delicious. I'm so impressed. I wouldn't have known where to start with those ingredients, especially the rice krispies.
