I just got a couple of donut pans & wanted to test them out. I overfilled the pans a bit. I used this recipe http://veganyumyum.com/2007/02/mini-donut-test-kitchen/ (omitting the cinnamon & nutmeg) & they worked out great - the exact taste & texture of cakey donuts. Next I'd like to try a yeast based recipe. For this first batch, I made lamington donuts & filled them with whipped cream & cherry jam.
