Oh man, I've been wanting to make something like this. They have them at Macaroni Grill, and my vegetarian partner gets them, and they look sooo good.

Do you think the taste would be changed dramatically if I used a different vinegar? If I've never seen coconut vinegar here but I have pretty much every other kind!

I've only ever used CV for this, but maybe trying something you already have on hand like apple cider or rice vinegar may work too. If you try it and it works, let me know!
