Quite possibly the most delicious, yet obscene thing I've ever made or eaten. Omni-approved! Recipe here.

Oh man, I've been wanting to make something like this. They have them at Macaroni Grill, and my vegetarian partner gets them, and they look sooo good.

Thanks for the recipe!

It IS evil! But made/consumed in small quantities, is so, so good! So creepily similar to real mac n cheese!

Woah, those look amazeballs!
Do you think the taste would be changed dramatically if I used a different vinegar? If I've never seen coconut vinegar here but I have pretty much every other kind!

I've only ever used CV for this, but maybe trying something you already have on hand like apple cider or rice vinegar may work too. If you try it and it works, let me know!

Hey, I saw your mac & cheese in the Veg News newsletter (well a link to their tumblr that had it on there). they linked your blog too. The GIF of the star track dude freaking out is hilarous.

Lots of people liked it, and some re-blogged it! you are famous.

I am so stoked that they posted it and the GIF is hysterical. It's great that VegNews is supporting blogs on their newsletter too!
