I wanted some flavor of corn for dinner, but I only had frozen kernels. Oh well, it's nothing that a little cornstarch and a splash of almond milk couldn't fix.

Corn, onion, garlic, red bell pepper, a touch of Earth Balance, baby spinach chiffonade added near the end, and a gravy of almond milk, cornstarch and a little nooch. No celery or tomatoes, but plenty of cayenne/black/white peppers and a couple shakes of Mexican oregano.

Love the color on that and the clever addition of almond milk.

Pretty!

I didn't know what maque choux was and had to look it up. Now I'm going to get some corn and make some and introduce myself to this food because I DO love Cajun cooking!

What a cool idea! I've got a ton of frozen corn, thinking I might try this out.
