I wanted some flavor of corn for dinner, but I only had frozen kernels. Oh well, it's nothing that a little cornstarch and a splash of almond milk couldn't fix.

Corn, onion, garlic, red bell pepper, a touch of Earth Balance, baby spinach chiffonade added near the end, and a gravy of almond milk, cornstarch and a little nooch. No celery or tomatoes, but plenty of cayenne/black/white peppers and a couple shakes of Mexican oregano.
