
banana bread muffins*, potato roasted with lemon juice and pepper, with tempeh bacon, topped with cherries and blueberries.

http://chocolatecoveredkatie.com/2011/10/10/fat-free-banana-bread/i only had 1/4 cup of flour in my cupboard, but goddamn, i wanted muffins.
-1/4 cup flour (i used a mix of spelt and bob's gluten-free all-purpose)
-1/2 cup black eyed peas
-1/4 cup frozen banana, thawed
-1/4 tsp baking soda, a tiny bit less baking powder, salt
-1/2 tsp vanilla extract
-1/2 tbsp lemon juice
-generous amount of cinnamon
-non-dairy milk as needed
mash together the beans and banana. in a larger bowl, mix other ingredients. add beans/banana. add almond milk. stir thoroughly. pour into some sort of baking container (i used silicone muffin holders). bake at 400F for maybe 40 minutes, until it's brownish on top, turn off the oven and let it sit for a few minutes.
this is a really fantastic recipe, and can be adapted in so many different ways!
