I'm sure both of these are tried-and-true recipes for most of you here, but I was blown away by how satisfying this meal was. I added a jalapeno to the snobby joes and substituted part of the chili powder with ground chipotle powder (Penzey's) for a bit of added smoky flavor. Delicious.

For the salad, I used garden rotini pasta I had in the pantry and substituted green pepper for the peas. I purchased a jar of Vegenaise several weeks ago and finally worked up the nerve to open it tonight to use in this salad. Honestly, I was very skeptical about how Vegenaise would taste. I am really picky about mayonnaise and over the years have tried just about every lowfat, fat free, store brand, etc. mayonnaise around and always went back to my beloved Hellman's. It's one of the things I really thought I would miss in trying to move toward a vegan diet. All I can say is WOW...this stuff is outstanding!! It really is as good as everyone says it is!!

That looks amazing! Snobby Joes are definitely a favorite at our place- so filling and affordable!

I've owned v'con forever and never made either of those, although the macaroni salad has been on my "to make" list for far too long. I was a mayo hater until Veganaise, and I was very afraid to try it too.
