This morning I tried the Toasted Coconut and Mango Muffins (replacing the mango with chocolate chips as suggested in the recipe variations) from Vegan Brunch, and they were a hit! I sprinkled the tops with untoasted coconut before baking for a bit of added crunch. I'll definitely be making these again.

BTW...can someone tell me what the deal is with chocolate? I used Ghirardelli Semi-Sweet Mini Chips because that's what I had in the pantry, but I'm not sure if they're vegan or not. The ingredient list says "may contain milk." What the fork? How is a person to know if they do or do not contain milk?

Those look so pretty! Especially with the strawberries in the background.

"May contain milk" is just an allergy warning, meaning that they also produce chocolate chips with milk in them on the same equipment or nearby. Most people would consider those vegan.

Oh wow. Those look incredible. I'm wishing I had coconut in my pantry.

those look truly beautiful. that reminds me that i bought a bag of the bob's red mill flaked coconut for the single reason that they looks really pretty. i gotta use them up.

Yes, to what everyone else said. The "may contain" is an allergy warning like "processed on equipment shared with" and I use products that contain those warnings.
