Our "Latin Night" signature dish:

Brazilian braised kale
Refried beans
Chorizo
Sweet plantains with lime
Avocado
Coconut Rice

Chorizo from VB and the rest is from VV. I put this together one night and the flavors went together so well it has become a thing at our house. This was the third time making it.

Oh yes, I'd like some of that! Nice presentation, too. Refried beans aren't exactly the prettiest (but they sure taste good). I wish avocados were less expensive.

Beautiful! Perfectly fried plantains and wonderful looking chorizo. Why does your kale look so dark? Just a dark variety?

I go to this Costa Rican restaurant that serves a super delicious veggie plate and it's got all of those things minus the chorizo. Yours looks even better!
