Does your marshmallow buttercream actually have marshmallows in it? I was trying to figure out how to make that recently.

After MUCH trial and error, I've ended up having the best results just making regular buttercream and adding LorAnn Marshmallow Flavoring (verified vegan via email). Oh, and in case anyone is wondering, if you try baking dandies into your cupcakes, they will melt away into nothingness and leave dandies-sized holes in your (delicious, marshmallow-infused) cupcakes.

I make the VCIYCJ Rocky Roads with Dandies, and they do explode a bit. They do best if I cut them in quarters, and sort of roll them so they're sealed shut again, which is a pain.
In other news: I want that s'mores cupcake like whoa.

You were lied to. I put a layer of graham cracker crust at the bottom of the cupcake, three dandies on top of that, and cake batter over that. I still had some that exploded out the top of the cupcakes, but quite a few that looked normal from the outside. They still melted into nothing and left caverns in my cupcakes. Boo.

That all looks amazing. I actually looked in to getting the train from Chicago to Memphis to Dallas so I could eat one of your cakes, but there isn't a direct train and I'd have to backtrack to Chicago.
I'm not trying to steal your secrets*, but do you use a higher ratio of shortening to margarine (or maybe all shortening) in your frostings? The frosting on the rainbow cupcakes looks like the consistency I've been trying to get (with, admittedly, not a huge amount of experimentation) and haven't been able to figure out.
