How do you make pizza like that? Its amazing looking and perfectly cheesy and bubbly! Is there a secret (pizza stone, magical cheese, a special sauce?) to them?

That pizza looks incredible! What dough recipe do you use? Is that Diaya on top with fresh tomatoes and basil? What do you cook your pizza on? How does it get so delicious looking?!?!

I'll try to find it, but if you look through my pizza posting history, my recipe is in there, somewhere. It's basically Reinhart's NY-style recipe from his American Pie book. I cook in a shitty electric oven from the 80s (thanks, slumlord) on a pizza stone. I crank it to max (supposedly 550... supposedly) and let it heat for 45 min - 1 hour beyond preheating if time allows. Cheese is a mix of Daiya mozz and FYH mont jack. Sauce is my own from scratch with San Marzanos, diced onion, oregano, basil, salt, and balsamic vinegar.

Really, I find it's about learning to gauge the dough as your kneading. I do it all by hand now (I used to use a mixer), and I think it makes for a better pie in the end. For me, it's about obtaining a supple, slightly tacky consistency. I bag the balls and let them ferment/rhubarb in the fridge for 3-5 days; that adds a bit of sharpness to the flavor. The stone is essential, too; I've tried air pans (or whatever those pizza pans with the holes in the bottom are called, but the stone wins, hands down. I've heard of great results using baking steel instead of stone.
