I've been so busy preparing my posts for MoFo, I haven't posted anything here for a while. I know there are so many blogs to read and so little time, so I thought I'd share some of the tasty things I've made from the cookbooks I've been giving away this month. I'll also throw in a little iron chef for you too!

I have more cookbooks to give away before the month ends: Great Gluten-Free Vegan Eats, Vegan Fire and Spice, Ani's 15 Day Fat Blast, Vegan a la Mode. Some pretty awesome books! Right now I'm giving Terry's Vegan Eats World. Post your comment HERE by midnight tonight 10/22/12 for your chance to win (US and Canada shipping). I just hijacked my own thread.

Now to get back to what you are really looking here for:

From Vegan Diner - Breakfast Benedicts Florentine

Wow, I have to try the scramble from the Low Cal comfort food book. That looks fantastic! I bet I can even get my tofu-hating partner to at least try that.

I've never seen or heard of arancini before, but they look lovely with that sauce. And even if I'm a die-hard crumbled scramble guy I have to admit that cubed scramble looks very tasty.

I wish I had Vegan Eats World already, I'd be making that naan right now! If I could put in an order, I would love the Fisherman's Soup & Sesame Crusted Tempeh (although subbing tofu, I don't like tempeh) for dinner, but it's a tough choice because everything you made looks amazing!
