I will have to try these. I just started a new contract position and I have to be there at 7:30, so that means breakfast in my car. These will be perfect.

I made these today for my breakfast next week. They came out fairly well, even though made them in an 8x8 pan and in a toaster oven. I had to use peanut butter, because the almond butter I tried to buy on Saturday ended up being part of the recall (sigh). Thank goodness I keep some creamy peanut butter around to make Isa's Pantry BBQ Sauce.
Unfortunately, I think they came out a bit dry for me; because they fell apart a bit as I cut them up. However, I will make them again. The next time though, I think I will use more milk, maybe half a cup and make them as little cookies with my cookie scoop. But I would say this is a keeper.

Hi Snugglebunny! (I love that name <3) I'm sorry they came out dry for you... My bf likes them better with the addition of 1T of coconut oil, so if you're not avoiding oil, you might try that! You can also reduce the baking time and score them pretty much the whole way through before cooking to avoid the crumble factor. I think granola type things take a bit of fiddling depending on the oven used, so thanks so much for your feedback and I'm so glad you enjoyed them on the whole!

indexandicon, I will try your suggestions next time. Honestly, I forgot all about pre scoring them, but the dough was so dense, it was hard to get it into the pan and flattened for cooking. Also, I live in Florida, so depending on how much we run the AC the inside humidity levels can also play with things like this. I may try these as bars again, because it would be nice to not always having breakfast cookies in the car. I don't think I'll add cocount oil though, since I can't afford it right now. But canola oil should hopefully be just as good. Then again, maybe I should just add more peanut butter. And since my toaster oven is also a convection oven, I should cut at least 10 minutes off the cooking time. I'll make them again next month and let you know how they turn out.

Just want to let you know I made them again. I added another 1/4 cup of milk, cut 10 minutes off the cooking time and prescored them. They came out great and were perfect to eat in the car on the way to work. These will go on my list to make for breakfast.
