Count me in! Right up my alley. What kind of soyrizo did you use? It looks chunkier than the stuff I get.

TJs brand. I like adding the soyrizo at the end in clumps and then mixing it in with the potatoes. I know people like to combine the soyrizo & potatoes right away and let them cook down but I find it dries out the soyrizo.
