Thanks! I also forgot to add. If you look for these noodles, make sure you read the labels. (I'm sure everyone here does) Some of these style noodles have eggs in them.

I love Asian noodle dishes. What kind of noodles did you use? I've found that the Filipino pancit noodles from my Asian grocery store are very much like chow mein or ramen and totally egg free.

The mock duck is sold in cans in asian markets. You can also use beef style seitan in its' place. Both work well. I like using pancit noodles for this kind of dish. Any thinner egg free chow mein style will also work. I get my noodles at asian markets in Chinatown.
