Lazy Smurf and friends had a Star Trek cookbook dinner party & I veganized the Klingon delicacy, heart of targ. It was a beety seitan roast with a red wine shallot reduction, balsamic roasted beets and thyme roasted parsnips served over arugula. Pretty gnarly, eh?
