All I want to eat in March and April is carrot cake. All carrot cake all the time. I healthied it up a little and made these carrot cake waffle bites (works just fine as regular waffles too, but my kid likes the little doughnut-hole shapes)--they freeze really well for Emergency Carrot Cake Breakfast Situations.

And for Easter I made straight-up carrot cake with cream cheeze frosting (the VegWeb recipe). Then I took it over to my mother-in-law's to find out everyone was no longer eating white sugar. So I have most of this baby in my fridge right now all to my white-sugar-eating self. Not sure what the big deal is anyway, Florida Crystals are practically beige!
