My new go-to comfort food is a big fat bowl of this kimchi fried rice. This picture is from the first time I made it, but the final recipe includes shitake mushrooms, carrots, and edamame in addition to the kimchi itself. Hey, I had kimchi bokkeumbap last night! Nummy. I did the more traditional style, with gochujang, soy sauce, sesame oil, and topped with slivered gim (nori) and sesame seeds. I like it best with older, really twangy kimchi and day old rice.

That sounds amazing. Also, "twangy" is an excellent descriptor for ripe kimchi.

TWANGY. Kimchi bokkeumbap is basically my favorite use for leftover rice. Like Pyewacket I use gochujang, sesame oil and soy sauce for seasoning, but yours looks really beautiful. Would definitely eat.
