 I made the marinated tofu from the vegan bennies recipe in Vegan Brunch but I cut the pieces square so I wouldn't have to waste anything. Then I fried up some some gimmie lean. In the meantime I toasted a bunch of english muffins topped with earth balance and nooch and then at the last second added a little bit of jalapeno havarti Daiya. Everyone went crazy over them, and I made them for nonvegans! It was so easy to make a giant batch that I am thinking about making them again just for us, wrapping the extras in foil and bring them to work.

Is that actually a massively huge breakfast sandwich or is it just the way the photo was taken? It looks so good but I don't think I'd be able to fit it in my mouth!

Yum. Last night's cocktails were rather too...er, delicious, and this is EXACTLY what I would have had for brekkie this morning, had I the magical powers to conjure it!
