I love steel cut oats. I LOVE being able to make a week's worth in one morning.

I wish I had that for breakfast this morning. Looks delish! What recipe did you use?

Thanks! Recipe is up on my blog. Super easy and few ingredients. Lemme know if you try it!
(I'm never much of a recipe developer. far too impatient)

Already added to my Evernote. However, I am wondering something. Can you eat these as bars if they are cold? I'm asking becuase I eat my breakfast in the car on the way to work and these would be a good thing to add to my rotating list so that I'm not eating muffin tops every week.

Hm....that's a good question. In theory it's possible, but I should note that when I first made them, the mix was homogeneous and would work alright so long as your squares weren't so big that they fell apart when trying to eat and drive and hold yer breakfast in hand. The second time I made them, they tasted the same and were lovely but the oats seemed to settle more on the bottom leaving a banana pudding like texture on top. I loved them both ways, but think that the latter would make for a more messy commute.

Good points. Of course, I could also just bring them to work and eat at my desk also. Which is one of my options, I just choose to eat in the car so that I'm not eating breakfast at 8:00. Its still in my Evernote, so if my situation changes, I could always make then. Nice thing about Evernote, it lets you collect recipes for possible future unforseen needs.
