Greetings PPK! Long time no porn! I'm coming out of hibernation to share some Easter goodies--I'm co-coordinating the Walk for Farm Animals in my city this year so I'm going to be trying to cook/blog/post more consistently to keep drumming up the local interest.

These are supposed to be destined for my preschooler's Easter basket but there is no stinking way they'll hang around that long. Second batch it is!

Those are so beautiful I don't even know what to do with myself.

Nice! I was debating making some but I don't have the molds. I went looking for Easter candy yesterday and found nothing vegan except one small $10 chocolate rooster and some gross-sounding jelly beans.

You can make them freestyle! I had more filling than mold space and just formed egg shapes with the extra and dipped them into the chocolate with a fork. Slightly more rustic but just as tasty!

Between this and the link to the homemade Cadbury cream eggs, I might cry. I am such a happy little vegan right now.

or make them into peanut butter cups using muffin papers!

Is it honestly that easy? I have a mini muffin tin that is crying out to be used.

^^ it honestly is. i made about a bizillion for a bake sale last year. you can use regular cupcake/muffin papers; the oils in the chocolate keep them from sticking after everything's cooled.

Hmmm, if I made some in muffin cups, that WOULD make it more reasonable to have several with my morning coffee, because technically they are kind of muffin-shaped? And therefore part of the muffin family? Yes? I'm going with yes.

it's super easy to make them with paper cups. even easier than doing the multi-step process with the plastic molds (i prefer brown glassine candy cups, because they're the perfect size for 1-bite candies, and the oils don't show as easily on white paper.) also, i like the dipping set by ateco. i used to use a set that had wooden handles. boy did they get messy quick, and were difficult to wash. ateco are all one piece of metal with no gaps.
