My dinner tonight. Not a beautiful photo, but to give you an idea:

That's a flour tortilla, Soyrizo, hashbrowns, CTate queso, taco shell, lettuce, tomato, guacamole, pan-grilled.

MMmm. This is what I'll do with those wonderful fresh Costco tortillas. No soyzizo, but I bet some beans would be good instead. Putting taco shell in there seems kind of genius. Is this a taco bell thing?

We need vegan cool ranch Doritos taco shells.

Brilliant! I guess you could put the sweet chili Doritos in there instead of the cool ranch taco shell. That sounds so wrong yet irresistible, I might have to try it.

It was seriously yum, two nights in a row! Y'all, try it. The genius of the taco shell or whatever crunch you put in is that it separates the lettuce-tomato-guacamole from the soggifying fillings.
