My first Food Porn thread! I'm proud of this one.

Ok, so I marinated some smoked tofu in Dr. Pepper and a bit of hot sauce & black bean sauce. Then I sauteed it with slivered almonds til the Dr. Pepper reduced down and got syrupy. Served on rice vermicelli with some green onion and red pepper that were marinated in rice vinegar, salt and sugar. And red pepper flakes.

Oh cool. I made a Dr Pepper marinade a while back that came out quite well. Yours looks a bit easier and probably tastier.

What does it taste like? Dr. Pepper flavored tofu sounds terrible to me but I'm intrigued.

Oh gosh, let me try to remember.

I started with this bourbon reduction sauce recipe:

...which I've made using dry-fried tofu a bunch of times. Here's what's in it:

Sauce:
1/2 cup bourbon
1/4 cup packed dark brown sugar
1/4 cup low-sodium soy sauce
3 tablespoons cider vinegar
1 1/2 teaspoons bottled minced garlic
1/2 teaspoon black pepper

TOFU RUB!:
1/2 teaspoon chili powder
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon salt
1 (1-pound) tofuloin (LOIN OF TOFU), cut into finger-sized pieces
Cooking spray


And I think I substituted Dr Pepper for bourbon, left out the brown sugar (or used only a tablespoon or so for a doubled recipe-- MUCH less, anyway, since there's already plenty in the soda), reduced it in a pan while I dry-fried the spice-rubbed tofu, and then poured it over for serving. So it's not actually a marinade, it's a reduction sauce. I hadn't really thought about marinating it, which is kind of strange since I marinate tofu in all kinds of random other stuff.

I also used the fancy little glass bottles of Dr Pepper ("Dublin Dr Pepper") since it's made with cane sugar rather than corn syrup, but those are kind of expensive when you can find them...

The spices used in the rub would be good additions, I think. Especially the cinnamon.

I went with regular HFCS Dr. Pepper. I drink that stuff a couple times a year, so I'm not too worried about the health aspects.

I've only had Dr Pepper once in my life and thought it was nasty, but that tofu looks amazing.

My mind is blown! I normally only like Dr. Pepper with rum in it, but I'd try it on tofu. Dr. Pepper has caffeine, right? Hmm, now I'm thinking of cola tofu. A keep you awake to go dancing all night dinner. Oh, or ginger ale tofu! Not for caffeination, just cause it might be a fun quick start to a good flavor profile.

Yeah, I do too-- I just figured since there's a store that has the fancy stuff I'd use it... 8)

The cinnamon and stuff is quite tasty, yes. Overall I really like that base recipe a lot and I've made it a few times.

Does stevia caramelize right? I'd suspect that since stevia has that weird extra-sweet flavor it would overwhelm the Dr Pepper-ness (a sort of weird cherry cola thing) with that strange straight-up sweetness.

The sauce depends on the sugars for thickening and stuff, too-- I don't know enough about stevia to know. It's certainly worth a try, but maybe have an easy backup sauce ready to go in case it doesn't work. 8)

Stevia does not taste strange to me....it tastes like Dr. Pepper - well, what I remember DR. Pepper tasting like 18 years ago.

I dunno-- stevia has a distinct flavor that I can only really describe as "thinner." It's, um. Yeah, I dunno. I'm getting into synesthesia here, I guess. It's very distinct from sugar.

I don't think the recipe will work with any kind of low or no calorie soda. It's not about the taste of stevia. I think it needs the real sugar to caramelize.

Okay, that's also my thought.

If you're worried about HFCS, look for Dublin Dr Pepper-- in California, you can sometimes find it at BevMo, and it's often available at fancy food stores. (missmuffcake, come on over to Santa Cruz one day and we can go beverage shopping and cook up some fancy tofu in various reduction sauces. It'll be fun!)

I do not like lots of refined sugar and traditional soda (it happened when I was hospitalized in high school - I developed an aversion to it)...I can handle 1 Zevia - but I do dig the Dr-Zevia taste so that is why I asked.

Talk the boyfriend into bringing me to SC, I have not been in 20 years...We can cook saucy stuff or Mexican...or comfort food....
