sorry for the crappy picture, i'm only posting this to tell you how awesome these muffins are and that you need to make them. now.   here's the recipe: http://seitanismymotor.com/2010/04/13/experiments/i've made it twice now. first time a while ago, i didn't add the chocolate chips because i forgot. this time, i was too lazy to chop up chocolate. maybe next time.. anyway, these are incredibly tasty. the top is slightly crunchy in the best possible way. the inside is fluffy and moist. best muffins ever. especially since i'm addicted to coconut macaroons, but i can't find a vegan version of those in the stores anymore. i didn't have soy yoghurt this time, so i replaced it with twice the amount of soy milk. worked out fine, though i had to bake them longer. ok, i admit it, coconut is like crack to me.

Mmm, I could do with something baked and coconutty right now... Have you tried the coconut macaroons in Vegan Cookies Invade Your Cookie Jar though?

coconut oil makes a lot of things taste better... just gives it that subtle coconutty hint that I like, so I can imagine that these are divine!

Wait. They taste like maccaroons, and they have a maccaroon-like texture, and there's no egg replacer in them? That's so cool.
