I got really excited that I had made these, and saw that there's another thread about croissants this very minute.... which means that EVERYONE on the ppk should make croissants. They're surprisingly easy, they just take like 8,000 hours.* Ok, go!  *But no, just 5? Just structure your day into 45 minute timeblocks of doing stuff, and it'll fly by so nicely. Beautiful! I actually do want to make croissants. I bought Peter Reinhart's Artisan Breads Every Day, and started to make the dough but screwed it up. Someday I'll try again!

Yay croissants!! I wish they didn't take so friggin' long to make... But they are soooo worth it! Especially when you make pain au chocolat. :)
