i've been jaded by years of being force-fed salad...

middle eastern-inspired salad w/ tomato, kalamata olive, and peas w/ tahini dressing

mexican-inspired salad w/ crushed blue corn chips, tomato, corn, and a cilantro-lime dressing

asian-inspired salad w/ mock duck (seitan thing from a can), carrots, raisin, and a miso-ginger dressing

some roasted squash and tofu w/ Isa's italian marinade

i could work on my plating...

It all looks delicious! I find myself wanting to eat a lot of salads this time of year because it's so hot, but I'm often too lazy to chop vegetables.

My lover has a hard time eating raw greens because of his crohn's disease, so i never make salads at home. Those are the kind of salads i would 'go wild' with when he was away for the night haha.

All 3 salads sound great, but I also am most interested in the Asian salad. I find farmers markets very inspiring for salad creation.

Very lovely! To give you a couple more ideas, I like to dress my salads with a seasoned mashed avocado & lemon or lime juice blend, then top them with various fresh salsas. :)
