I used veggie stock instead of the water+broth powder, bragg's liquid aminos in place of kitchen bouquet, and added 1/4 tsp each of rosemary, sage, and ground black pepper. I skipped the pepperjack cubes and just used daiya mozzarella shreds. I fed the poutine to my friend who claims to hate gravy, and he devoured the bowlful as fast as he could without scalding his esophagus! definitely will make this again. next time, I think I'm going to try to concoct some kind of "cheese curds" out of tofu to make it a bit more authentic. any suggestions on how I might go about doing that would be appreciated!

I had vegan poutine once in a restaurant, but yours looks much better!

That looks so tasty! Poutine is one of those things that i wouldn't have eaten in my pregan days, but that i totally want to devour in vegan form.
I wonder if marinating tofu crumbles would make a good vegan cheese curd?

Awesome! I almost ordered the poutine special at Aux Vivres in Montreal when I was there, but I'm glad I didn't in the end because that word is not pronounced how I thought it was pronounced at the time, and from watching a lot of Spiral lately I have learned that the way I thought it was pronounced means something...else.
