This is my Fourth of July picnic dish - it's been hot as balls for Seattle (almost 90 degrees), so making a cold, travel-friendly salad seemed like a good move. Blanched almonds stand in for chicken (they're simmered to make them plump and tender), tossed with celery, shallot, and pickled grapes in a bright vegenaise dressing. The pickled grape relish is a new discovery of mine, and it is AMAZING.
