This is essentially a banana bread dressed up with with my favorite parts of morning glory muffins - carrots, apple, spices, and coconut. I used coconut oil instead of the shredded coconut typically used in morning glory muffins (I wanted the flavor, not the texture), and decided against including raisins and nuts (they're just not my favorites in baked goods). Bonus, it's also 100% whole wheat.

I'm pretty much in love with it. The bread has a hearty, moist crumb and the best candied, crunchy crust on top... the crust is totally my favorite part. :) Also, your house will smell like delicious banana-y, coconut-y, spicy magic when you bake it.
