I just semi-unintentionally bought like 10 lbs of butternut squash because I have no concept of scale. Some of it will definitely go toward trying this recipe! Thanks for reminding me with this delicious looking picture.

I love this recipe so much. I got my first squash of the season from my csa/veg box thing a couple of days ago and I may well utilise it for this purpose.

I have a small butternut squash from my garden, and yesterday I picked one up that is the size of my cat. I am going to have to do this.

This recipe makes the most amazing lasagne in the world. Omni approved too! Mine went head to ahead against meat/cheese lasagna at a work pot luck and won by a landslide.

Nothing fancy. Just Vcon tofu ricotta, spinach, mushrooms, and this glorious sauce. I also usually add a layer of the extra roasted squash. One recipe will make enough sauce for an 8x8" pan.

Uncover and turn on the broiler and it will get nice and brown on top.

I'm roasting some squash this afternoon just for this recipe! I have some other food in the fridge I need to deal with first, but I secretly just want to make this tonight. It looks beautiful!

Is it really garlicky? I used to love a good garlicky alfredo. I have this recipe bookmarked in Isa Does It, but I'm wondering if I need to up the garlic or add some roasted garlic to the blender.

I didn't think it was particularly garlicky. It could take a few extra cloves if you want more garlic flavour.
