I love it when you've got great leftovers and lunch is more than just a bowl of cereal! This is Italian lentils, balsamic roasted asparagus and little mushroom pies. I also made the mushroom and potato gratin from Mediterranean Vegan Kitchen, but I'm saving that for dinner. As for the pies, I didn't completely follow the recipe, but I was inspired by this.

Thanks baps! I tried to make a sour cream type pastry with cashew cream, ACV and canola oil. I just used plain flour, but then recalled that the old sour cream pastry recipe I used to make was half-and-half plain and self-raising flour. Oh well... My "egg wash" is a little soy milk, arrowroot and a touch of turmeric for colour as suggested in the recipe I linked to on Taymer's blog (the arrowroot and soymilk wash is really good for getting seeds to stick to bread, etc too). I didn't bother with baking the bases blind. These reheated pies are a touch too brown on the edges, but whatever, they were nice and crispy!

And thanks dearess, most of my leftovers look like a sloppy, microwaved abomination!
