You guys, this is the first recipe I made from "Jerusalem", and it is KILLER. I was blown away by it. You're essentially using a pistachio cream (pureeing pistachios in liquid as you would a cashew cream) to make a decadent soup of leeks, shallots, cumin, ginger, and orange. The flavor combination is so, so interesting and delicious. I veganized the recipe (just replaced the chicken stock with veg) and brought it to a potluck dinner party of about twenty omnis. It was far and away everyone's favorite dish. :)
