This is my second recipe from "Jerusalem" - a pilaf of basmati and wild rice, with cumin and curry-scented chickpeas, fried onions, dried currants, and fresh herbs. It's satisfying Sephardic comfort food, and reminded me a lot of Mujaddara, which is one of my favorite Arabic dishes ever ("Jerusalem" includes a recipe for that, as well). A good example of the culinary cultural overlaps they discuss in the book.

You inspired me to make this myself a couple of days ago. I saw your beautiful pic and thought... Yes! Dinner! I didn't have any wild rice, so used red instead. The crispy onions are heaven! I do think the recipe could benefit from the addition of some toasted almonds for a little texture though. I made tomatoes stuffed with millet and cashews to go with it. Thanks for the inspiration!

Yea! So glad you tried it! Agree that a bit of crunch would be a great addition, especially without the extra "bite" from wild rice.
