Sharing my third recipe from "Jerusalem" - Roasted Butternut Squash & Red Onion w/ Tahini & Za'atar! It's a simple yet amazeballs dish of roasted veggies smothered in a sauce of tahini, lemon juice, water garlic, and salt then sprinkled with toasted pine nuts and a za'atar spice blend (sumac. thyme, sesame seeds, and salt). The sauce is the key - it balances out the sweetness of the squash and onions and brightens the whole dish with its creamy-tangy-salty deliciousness. I want to use it in other recipes as a kind of feta/goat cheese replacement (I'm thinking it would be killer with beets...).
