We had a lovely vegan potluck for my daughter's second birthday. We're so lucky to know so many awesome vegan and vegan friendly families! My husband and I have never thrown a birthday party before, so we went overboard with the food (and a bit nuts), but it was fun and delicious!

Vegan nacho bar! Top row is enchilada sauce and tofu sour cream, second level is chickpea poppers and Vegnews cheese sauce, third level is corn chips and tomatoes. We had hummus (so toddler friendly!), chips, salsa, and guac. I also added olives (not pictured), because L loves olives.

Our wonderful friends brought - green beans (stuffed with almonds and cilantro - so GOOD!), unchicken nuggets and the lovely JENNA of Good Good Things, brought a delicious pasta.

I made the Nirvana Enchiladas from the PPK blog, and it was really easy, GF and SO good:

And we made three types of cupcakes:

Sexy Low Fat Vanilla with chocolate buttercream and topped with raspberry, the carrot cupcakes from VCTOW (with 1 cup of flour and 1Tbsp of arrowroot (thanks Supercarrot!)

The cupcakes were so easy, and I ended up in a baking frenzy and made 2 batches of the carrot, which were amazing. We had way too many cupcakes.

My phrasing is terrible! I meant that the green beans were made with almonds and a lot of cilantro. They were so delicious, I am so sad I didn't snag more.

WOW everything looks so good! I just want to leap into that smorgasbord and be disgusting as I eat everything in sight.

L is the freaking cutest! Look at that smile. She made me smile! And I fear small children! On occasion you post stories of maternal challenges, but overall, everything about your life with L makes me understand why people choose to have kids. So sweet!

Your daughter really is the cutest. And you get bonus points for claiming that hummus is toddler friendly; my kids think hummus is made of vomit and bird droppings. So disappointing...

Desdemona suggested that the best toddler-friendly meal would just be a tub of Earth Balance, perhaps supplemented with a bag of crumbly cheesy crackers and veggie poofs. Which would certainly go over well with Leela!
