A couple weeks ago I went orchard-ing and ended up picking a ridiculous amount of apples and pears. I used the first round of ripe pears for these muffins, which are essentially a whole wheat spice cake with pockets of jammy pear bits. The black pepper and ginger combo is inspired by old-school gingerbread recipes (there's allspice and nutmeg in there, too).

I often use white wine vinegar instead of ACV in baking, because I hate the flavor of ACV. It's usually a small enough amount to cook off, but I just don't tend to keep ACV around the house because I'm not going to use it to make salad dressing or in any other recipe where I might taste it. You could probably even use lemon juice. You just need an acid to react with the baking soda.

Like Rhizopus Oligosporus said, white wine vinegar or lemon juice will work too! There's a lot (1 1/2 teaspoons) of baking soda in these, so the acid is necessary. Lemon juice and most vinegars hover around 5% acidity and are pretty interchangeable in a recipe like this one :) Let me know how the muffins work for you!

i didn't have any vanilla, and i may have used too much salt, but the combination of pears and ginger and nutmeg and pepper really work well together.
