This time last month, I started cooking again after two months away:

Serious Eats' Jo Goldenberg bagels
Image

Khao Soi curry noodle soup with homemade red curry paste
Image

More curry paste from the Asia Scenic cooking class booklet: Panang
Image

Panang tofu & steamed baby bok choi
Image

Fluffy pillow pancakes, Isa Does It
Image

Seitan sausage & kale, yeasted Southern-style biscuits
Image

My precious bloody mary-ready vodka infusion of rosemary, garlic, black pepper & hot chilis
Image

Pumpkin pie infused scotch whiskey
Image

Khmer-style green papaya salad for a dinner party
Image

Persimmon-dark chocolate pie on gluten-free coconut flour crust
Image

More brunch: scrambled tofu, vwam apple-sage sausage & mashed potato biscuits
Image

Mini muffin-tin pies for Thanksgiving (even though I over-baked and super-molasses'd the pumpkin, these made me happy! Especially the black bottom oatmeal little guys)
Image

Peanut butter maple hearts

oh, good! I actually mostly cook on a whim based on ingredients or from recipes, but now and then I actually write things down: http://comesconewithme.com/category/recipes/ [recipes tag of posts]

feel free to ask me if there's anything you want to know more about, always happy to talk for ages about food.

Yes, this. Do you have go-to recipes? I really want to attempt making something authentic-y.

Basically, it's all about cooking FAST and making your own curry pastes. That, and I love mushroom soy sauce to make up for the 'missing' flavor vegan Thai can have.
These books are my go-tos: http://www.maykaidee.com/cookbook
