Here was my Thanksgiving dinner:  Susan V's green bean casserole. I love this. I've made it every year since becoming vegan.  My plate. Starting left: Tofurky roast slices w/ gravy, cranberry sauce, stuffing, mash wih orange herb gravy, green bean cass, roasted sweet potatoes, roasted brussels, dijon glazed carrots.  Bryanna's pumpkin pie with maple sweetened cashew cream. The best.

Yum! Everything looks delicious. I need to try the green bean casserole one day. It was never a tradition in my family to have it, so I've never even had the non-vegan version. It sounds good, though.

Looks delicious! How did you get your cashew cream to look like that? I tried making it, but I failed miserably. So I went with coconut whipped cream instead.

I used a blender and put in the soaked cashews first, turned it on and then added the liquid little by little. What happened when you tried it? Coconut whip sounds amazing.

It didn't really thicken for me. But maybe I added too much vanilla? I dunno. I'll try it again.

That cashew cream does look amazing. I've never had pumpkin pie, I definitely want to try that one.
