Fried Seitan (Seitan recipe from Isa Does It, Colonel Schmolonel breading recipe from Sexy Vegan Cookbook), mashed potatoes with punk rock chickpea gravy (Vegan with a Vengeance) and greens (Sexy Vegan Cookbook)

My son Chris (who is 19 and has been vegetarian for nearly 10 years) helped me make this

It did taste really good. We made enough that I have two lunches for this week, and there were several patties left over with some leftover mashed potatoes to send to my mom as well. Chris got so caught up in taking the picture that we had to tell him to cut it out and eat already!

You double dip the seitan cutlets - first in a soured soy/almond/whatever milk mixture, then into the flour mixture, then back into the milk mixture and then into the flour a second time. The flour mix really stuck onto the seitan well.

My kids liked it so well, we are making it again this weekend. I think this time I will use the chicky seitan recipe just to change things up a little bit. That has a bit more flavor, I think.
