I made this to celebrate the 50th anniversary of the Beatles arrival in America. I used raspberry jam and VCTOTW fluffy buttercream for the insides. It was scrumptious!

My Mam used to make Victoria sponges regularly when I was growing up and only ever used salted butter in the icing (we couldn't get unsalted). Recently I tried to recreate it by adding a pinch of salt to the mix and it worked SO well.
