I've been doing a cake every weekend. Help! This one is again victoria sponge but with lemon curd. I found a vegan lemon curd recipe online which didn't work too well, it was too runny. But the cake itself is kittee's vanilla cake recipe which gives the most tender cake! Buttercream from vctotw inside. So scrummy. That looks great.

The best lemon curd is the filling for Vcon lemon bars. Just make as directed and it's the perfect texture, taste, and consistency.

That looks delicious, I love Victoria sponge cake, but have never thought to play around with the usual jam filling.

The best lemon curd recipe I have tried is this one by Bryanna Clark Grogan: http://veganfeastkitchen.blogspot.co.uk/2008/10/vegan-mofo-quick-and-easy-vegetable.html

It's made from parsnips, but to me the final product was a dead ringer for what I remember Lemon curd being like, and it came out excellent for me! The process of making it was super easy too.

Oooo, that looks delicious. And I was feeling sad recently about the lack of vegan lemon curd so I'm excited to try the suggested recipes that have been posted in this thread.
