Well I went away for the weekend and my zucchini got out of hand, so here is a giant one scooped out, filled with cashew ricotta, and topped with a cherry tomato and zucchini sauce with fresh basil. I can't wait for the tomatoes to be ripe so I can make this with all home grown produce! It was heavenly.

I'm not even a very big zucchini fan, and that looks and sounds amazing. If our zucchini ever bears any fruit, I'm totally going to do this.
