BBQ seitan ribs and chocolate cupcakes

On Sunday night I decided to recreate a couple of our favourite meals from a recent trip to the United States.

BBQ seitan ribs, coleslaw and corn on the cob- just like we had at Karyn's Cooked in Chicago.

And the famous Babycakes chocolate cupcakes!

Oh, very Americana. Ribs were one of the few things I knew I'd miss as a vegan. I can live without them just fine now, though.

Both look magical. Although I tend to be disturbed by fake meat that looks authentic, the ribs are calling to me.

They're baked rather than boiled, which I way prefer- probably just because I haven't had great success with boiled seitan in the past. So I find it denser than other seitan I've made. The author of the original recipe said that she found it a bit spongier than other kinds, but that wasn't really the case for me. I guess it's meaty, but not so meaty that it's disconcerting.

It's seriously a foolproof recipe, though.

Just plain old BBQ sauce, from the bottle. This was a weeknight meal, so I really couldn't be bothered making my own from scratch.
