I can't remember where I found this gem of a method (so if it was you or your blog, YOU ARE AMAZING, THANK YOU!), but I can't stop eating tofu this way.

1. Freeze block of firm or xtra firm tofu.
2. defrost and squeeze out most of water, cut into largish cubes or triangles.
3. poach in veggie broth/boullioun for about 15-20 min.
4. remove from broth, blot on towel, coat with seasoned cornstarch.
5. lightly fry or spray with oil and bake in a 375 oven, turning every 5-10 min. until brown and crispy.
6. add to salads, soups, entrees, sides, your face.

will be nice and crunchy outside and juicy and flavorful inside. even my omni husband has proclaimed this 'the best and maybe only way to eat tofu. ever'.

Silly question time- when I freeze the block of tofu, am I keeping it in the package it comes in (soaking in water)?

I always take mine out of the package and freeze in a freezer bag, but honestly I have no reason why I do that. I imagine one could totally just chuck your packaged tofu in the freezer and freeze that way as well. I just figure it's got less ice to thaw my way?

to 'poach' I just mean to let it simmer with the lid on in the broth/stock.

oh, and seasonings I typically just use sea salt, black pepper, garlic powder, onion powder, and sweet paprika.

I finally got round to making this...it's awesome! I oven baked it in a little toasted sesame seed oil and it was perfect.

Yes, the texture changes. Frozen and thawed tofu becomes spongier, chewier, and sort of more crumbly. The sponginess makes it better at absorbing marinades.
